Chimichurri
INGREDIENTS:
1 cup flat leaf parsley
1/4 cup cilantro
1/2 cup olive oil
1/3 cup red wine vinegar
2 cloves garlic
3/4 tsp dried red pepper flakes
1/2 tsp cumin
1/2 tsp salt
PROCEDURE:
Combine all ingredients in a blender and blend until smooth. Pour over stir fry, potatoes, or grilled meat.
NOTE: you can play around with the parsley to cilantro ratio. I’ve seen some recipes that just use parsley.
