Massaged Kale Salad
This makes a great potluck dish.
1 bunch kale (curly is best, but any type will do)
1/2 cup grated parmesan
1/3 cup olive oil
1/4 cup lemon juice
3 cloves minced or crushed garlic
1 TBLS Soy sauce or tamari
1/2 tsp freshly ground black pepper
1/4 tsp salt
1 anchovy fillet-minced (optional)
DIRECTIONS:
1. Strip leaves from the stems and discard stems.
2. Wash, dry, then tear the leaves into small pieces and place in a large bowl.
3. In a separate small bowl, combine all the other ingredients and whisk well.
4. Drizzle contents over the kale.
5. With clean hands, massage the dressing into the kale leaves until the volume of greens is reduced by half.
6. Adjust seasoning if needed.
