CSA Newsletter - Summer - Week 16

I am grateful for the rain that watered in the cover crop Jim spent all weekend planting and grateful for the sun’s supposed return next week so we can plant garlic and get the potatoes out of the ground. We attempted a small potato harvest for CSA this week but even our 4 wheel drive tractor could not gain enough purchase in the mud. We had to give up after one crate. So, no potatoes this week….

WHAT’S IN THE BOX:
carrots
beets or chard
yellow onions
red onions
green cabbage
kohlrabi to 1/2 of you
butternut squash
cilantro
tomatoes
peppers

ELABORATIONS:
Butternut squash: Besides acorn, this is one of the better know squash. It is the go-to for creamy squash soup. It is also delicious baked and topped with butter, feta, and toasted walnuts. There are a gazillion recipes for butternut. Might want to set a timer for your internet search lest you get drawn into a culinary rabbit hole and then end up eating cereal for dinner because it is now 9:00 pm. Don’t say I didn’t warn you.
Cabbage: Remember that finely shredded cabbage makes a great substitute for lettuce on taco/burritos. Since the deer have decided the lettuce patch was actually planted for them, we are getting creative with cabbage. There are also a plethora of fresh slaw ideas out there. Again, set a timer!

Everything else should be familiar by now.
