Zucchini Bread
3 eggs
1-3/4 cups sugar
1 cup salad oil
3 teaspoons vanilla
2 cups grated, unpeeled, raw zucchini
2 Tablespoons grated orange rind
3 cups sifted flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
2 teaspoons cinnamon
1/2 cup chopped nuts or raisins
Beat eggs until light and fluffy.
Add sugar and continue beating.
Stir in oil, vanilla, zucchini, and orange rind.
Sift dry ingredients, then stir into batter along with nuts and raisins.
Pour into 2 greased 8×4-inch loaf pans.
Bake in preheated 325-degree oven for 50-60 minutes.
Makes 2 loaves.
