Late Fall - Week 1 - November 9, 2019

Welcome to week 1 of the Late Fall Share. Remember that most of what’s in your box will keep for weeks, so don’t stress about a backlog of squash or potatoes! The weather has been interesting lately. We have had several days when the start time had to get pushed back until 9 or 10 so that the veggies could thaw and we could accurately assess whether or not they survived. So far only the chard has suffered. Everything else is hanging tough. We have been enjoying the extended sunshine. Today actually threw me for a loop. Rain? What? I barely remember what it’s like!

WHAT’S IN THE BOX:
orange, purple, and yellow carrots
beets
spaghetti squash
butternut squash
curly kale
arugula
Italian parsley
potatoes-huckleberry gold
yellow onions
shallots

VEGGIE ID:
Arugula- We only grow this in the cool weather when pest pressure isn’t an issue. Additionally, the cold temperatures keep it sweet and nutty, instead of hot and spicy. We love to add this tender green to our salads. You can also roughly chop it and sprinkle it raw on squash dishes, pizza, pasta, etc. It adds a refreshing note to any dish.
Purple and yellow carrots-Again, we only grow these in the cool weather when they are sweeter. They aren’t as sweet as the orange ones. We prefer to cook these. They are amazing tossed with olive oil, salt, and pepper and oven roasted on high heat (450). Add them to soups and pot roasts, or anywhere you like cooked, but flavorful carrots.
Huckleberry gold potatoes- These are very similar to yellow Finn and Yukon gold. They have an amazing texture and can be used just about any way imaginable.
