Zucchini Pizza Crust

From “Celebrating a Healthy Harvest” from The WA state WIC program

Crust
3-1/2 cups grated zucchini and/or other summer squash
3 eggs, beaten
1/3 cup flour
1/2 cup Parmesan cheese, shredded
1/2 tsp dried basil

1. Preheat oven to 350.
2. Combine all ingredients and press into an oiled 9×13 pan.
3. Bake for 20-25 minutes until the surface is dry and firm.
4. Brush the top with a little olive oil and broil under moderate heat for 5 minutes
5. Pile all of your favorite toppings on and bake at 350 for about 25 minutes.
