Kale Salad with Mustard-Balsamic Vinaigrette

Mustard-Balsamic Dressing
1/4 cup olive oil
1/4 cup balsamic vinegar
2 tbsp brown sugar
2 cloves garlic, crushed
1 tsp salt
freshly ground black pepper
1 tsp curry powder
2 tsp Dijon mustard
several fresh basil leaves, chopped

Other Ingredients:
1 bunch kale, de-stemmed and finely chopped
1 medium red onion diced
3 carrots, grated
1 cup green beans, chopped
crumbled bacon-optional
Gorgonzola cheese-optional
slivered almonds-optional

Procedure:
1. Blend dressing ingredients in a food processor or with an immersion blender.
2. Combine dressing and veggies.
3. Serve topped with crumble bacon, Gorgonzola cheese, or slivered almonds.
