Herbed Rice Salad with Italian Parsley

Dressing:
4 tbsp olive oil
zest of 1 lemon
juice of 2 lemons
1 generous bunch parsley, chopped
1 tsp fresh rosemary
1 tsp chopped fresh thyme
1/2 tsp fines chopped fresh sage
1 small clove garlic, mince or crushed
salt and freshly ground black pepper

Other Ingredients:
4 cups cooked firm brown or white rice (not sticky rice)
4-6 green onions chopped
grated carrots and radishes (or substitute other veggies such as turnips or kohlrabi)
grated hard cheese such as Parmesan, Romano, pecorino, etc.

Procedure:

1. Cooked the rice far enough in advance that it can cool before tossing with the dressing.
2. Place all dressing ingredients in a blender.
3. In a large bowl, combine rice, chopped veggies, and dressing. Sprinkle the top with grated cheese and green onions.
