Creamy Carrot Curry Soup

2 cups chopped carrots
1-1/2 cups chopped onions
3 cups water
cook approx. 20 minutes

add 1/2 cups cashews
1 tablespoon soy sauce
1 or 2 teaspoons curry (depends on how spicy you want it)
1/4 cup (or so) chopped parsley or cilantro

Put all into the Vita Mix blender and blend it well.
