Cinderella Pumpkin Muffins

Recipe from Debbie Leung, 9th Heaven Herbs and Vegetables

  • 1/3 cup butter
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup Cinderella pumpkin (or other winter squash)
  • 1 teaspoon vanilla
  • 1-1/3 cups flour
  • 1/4 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts
  1.  Cream butter and sugar together.
  2. Add eggs, processing until smooth.
  3. Add pumpkin and vanilla, processing until smooth.
  4. Mix in a separate bowl – flour, baking soda, baking powder and salt.
  5. Add to wet mixture in batches, processing until smooth. Stir in walnuts.
  6. Pour into 12 muffin cups.
  7. Bake about 20 minutes at 350 degrees.
