3 lbs potatoes, peeled and cubed into large chunks
1/4 cup olive oil
2 garlic cloves, sliced thin
4 oz. blue cheese
pinch of crushed red pepper
1. Boil potatoes until tender, drain, but reserve 1/2 cup cooking water.
2. In a skillet, heat the olive oil with the garlic until the garlic starts to brown.
3. Mash into potatoes along with the reserved cooking water, the blue cheese, and the red pepper flakes.
